CHOCOLATE RASPBERRY PANNA COTTA Serves 8
4 Cups of heavy cream or half and half 1/2 Cup sugar 4 Tsp unflavored gelatin (slightly less than 2 packets) 2 Tsp vanilla extract 6 Tbsp. cold water La Quinta Olive Oil Chocolate Raspberry Balsamic Vinegar
Heat heavy cream and sugar in a saucepan. Once sugar is dissolved, remove from heat and stir in the vanilla. Lightly oil 8 custard cups. I use spray unflavored olive oil for this. Sprinkle the gelatin over the cold water in a medium sized bowl and let stand 5 to 10 minutes. Pour the warm Panna cotta mixture into the prepared cups, then chill until firm, at least 2 hours. Run a sharp knife around the edge of each cup and unfold each onto a serving plate. Drizzle with the Chocolate Raspberry Balsamic and top with fresh raspberries or any other fruit.
