Apple Galette
Serves 6 to 8
Preheat oven to 400 degrees F
Galette dough for 9” pie
3 tablespoons vegetable shortening
3 tablespoons butter
1 cup all-purpose flour
2 tablespoons cold water
1 teaspoon cinnamon
1 teaspoon sugar (mix with cinnamon)
½ teaspoon Demerara sugar (optional)
Filling
½ cup sugar
3 tablespoons all-purpose flour
1 teaspoon cinnamon
½ teaspoon salt
4-1/2 cups apples sliced (Gravenstein)
2 teaspoons cold butter
Dough:Use a pie dough cutter to blend shortening, butter, flour & salt to cornmeal stage. Slowly add cold water, mixing with a fork until dough comes together. Add more water if necessary. Form into a ball, cover and chill at least 2 hours before rolling out. In the palm of your hand, form ball into flat, round disk. Roll dough on a floured surface until it is 1/8”-inch thick. Dough will be 14 to 16 inches in diameter. Place in bottom of a 9” pie pan; dough will fall over edges of pan.
Filling:Blend sugar, flour, cinnamon & salt. Set aside. Layer ½ the apples in the center of the galette shell. Sprinkle ½ the sugar mixture over the apples. Repeat using the remaining apples & sugar. Distribute small butter pieces evenly over fruit. Bring edges of dough toward the center over the fruit & staple to fruit with toothpicks. There will be a small opening in the middle. Sprinkle top of crust with cinnamon sugar, then Demerara. Bake until a toothpick inserted comes out clean and juices are bubbling around the crust, 45 to 50 minutes.
