Italian Sausage & Chicken Stew
Serves 6
2 T LQ Olive Oil Jalapeno olive oil
3 T flour
2 cups chopped onion
¼ t dried thyme
1 cup diced celery
1 cup diced green pepper
¼ t red pepper flakes
4 cloves garlic, minced
4 oz. Italian sausage
12 oz. skinless, boneless chicken thighs cut in 1” pieces
1 bottle LQ Olive Oil Ritrovo Abruzzese pasta sauce
1-1/2 cups of chicken broth
Hot cooked white rice
Directions:
Heat flour and oil in a dutch oven over medium-low heat, cook for 5 minutes until lightly browned, stirring often with a whisk. Add onion, bell pepper, celery, thyme, sausage and garlic; increase heat to medium-high, and cook five minutes stirring frequently. Add red pepper flakes and chicken; cook for 1 minute. Stir in pasta sauce and chicken broth; bring to a boil, stirring frequently. Cover, reduce heat and simmer for 20 minutes or until chicken is tender. Remove from heat, stir in green onions & serve over rice.
